Welcome From Chef Nick West

Hi, Nicholas West here. I set up this site to help spread the word about great all natural and organic food recipes as well as cooking tips I have learned as Chef in Colorado. I intend to post info and videos about my “off the grid” cooking adventures in the Rocky Mountains so stay posted.  I will also provide news about great restaurants, cafes, and pubs that can be found in the beautiful Southwest corner of Colorado where I live and work including the towns of Dolores, Telluride, Cortez, and Durango.

The Farm...It's a Beautiful Thing

Even before I went to culinary school, cooking great food from fresh ingredients has been my passion. I currently work at The Farm, an intimate lunch bistro in the heart of historic downtown Cortez, Colorado. We serve homegrown and homemade salads, soups, and sandwiches made from mostly local/ mostly organic ingredients(Eat in or Take Out). The menu changes seasonally, and we frequently offer specials based on what’s fresh and local. Our hours are 11am to 3pm Monday-Friday. We now do a once-a-month 100% local dinner engagement at The Farm in addition to our delicious lunch menu. Our dinners are help every third Saturday of the month, and are reservation only (due to limited seating). These dinners feature the best local ingredients of southwest Colorado and the Four Corners Region, in seasonally themed menus worthy of fine dining. Reservations for these dinners are made at The Farm located at 18 E. Main St. Cortez, Colorado 81321.
